The easiest one-pan meal of my week in my continuing note-to-self recipe’s are simple taco’s.
Cook 1 pound of meat. Ground beef is easy but you can substitute chicken, pork, chorizo, shrimp, etc.
In a bowl off to the side, dump the following:
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp cornstarch
- 1/4 tsp dried mexican oregano
- 1/4 tsp paprika (optional)
And on the cutting board prepare:
- 2 cloves of garlic, minced or chopped finely
- 2 spring onions, in 1/8” to 1/4” slices
Pour 3/4 cup water onto the meat in a pan on medium heat. Dump the onions and garlic and stir. Spread the bowl of assorted spices over the meat and mix into the meat. I like to add a tablespoon or so of chili stuff in a tube because it is consistently the same level of hot – raw chili’s are awesome but sometimes weak, sometimes terrorizing.
Simmer for about ten minutes or until the water is mostly gone. Serve in a soft shell with cheese, and a fresh leafy green.
